Woodsy Eggplant Jerky
Are you vegetarian looking to add a great, smoky flavored snack option to your diet? How about those of you just wanting to add a good low calorie, nutrient-dense snack to your mid-day repertoire? Either way, this Woodsy Eggplant Jerky is guaranteed to light your taste buds up, and with the added seasonings and spices your metabolism will thank you too!

Instructions
  1. Rinse your eggplant thoroughly and slice it into jerky-sized pieces. Slice the top and bottom of the eggplant off, and then slice your eggplant in half. This enables you to be able to set the eggplant firmly while cutting.
  2. Combine all of your remaining ingredients into a large bowl and mix them well. Put your eggplant slices into the bowl and let them sit for 2 hours. I cover the bowl with plastic wrap since the smell will be strong!
  3. FOR OVEN: Lay your marinated eggplant slices onto a cookie sheet lined with parchment paper. FOR DEHYDRATOR: Lay your marinated eggplant slices on your dehydrator trays. At this point you can sprinkle more black pepper and/or paprika (optional) for an even more woodsy flavor!
  4. FOR OVEN: Set your oven to its lowest setting and dehydrate your eggplant for 10-12 hours, checking it periodically. FOR DEHYDRATOR: Set your dehydrator to 125 degrees and dehydrate your eggplant for 15-18 hours, checking it periodically.
